Busy!!

Apologies for not writing more this week...it has been a hectic week. Andy and I have been finishing marriage prep at the church...preparing for the party we are having for my 30th birthday and working on getting wedding invitations done and in the mail!

I have been tracking and making wise food choices. I have been working on changing up my workouts. Like this past weekend Andy and I laid paths down in our backyard, which was an incredible amount of work...and of course was probably the hottest days we have had so far.

We did get invited in the mail and my goal for next week is to do a better job of blogging. I will post pictures from the party too!

Frustration

So Wednesday I weighed in, even though I didn't have to because I only have to weigh in once a month now. I feel like I need to see that weight every week in order to stay on track. I was a little frustrated with the woman at WW who weighed me. I was still above the 2 pound window I have for lifetime, and she made a comment about it saying that if it took me too long to get back within that 2 pound window I would have to pay every week. I was so frustrated because the people at the meetings, especially those that work there, are supposed to be your support system and encourage you not make you feel bad about the little weight gain that happens. This is not how you should feel after talking to one of the WW staffers. I started this week trying to not react emotionally to the negative comment. This will be a challenge for me.

Thursday- I started the day with a banana peanut butter smoothie. I went out to lunch with a co-worker. We walked over to a health food store that makes cold pressed juices, smoothies and delicious fresh food! I got a chicken wrap with a side of red pepper spread and multigrain chips. After work we had a happy hour, I did my best to avoid eating all of the high points appetizers.

Friday-For breakfast I had some ice tea and sparkling water, an apple and biscotti. For lunch I was supposed to go out with some co-workers but the plans got canceled at the last minute. Instead I got a very light sandwich of cucumber, avocado, sprouts and lettuce on multi-grain bread. This was accompanied by a pickle and some chips. For dinner I roasted from broccoli and grilled up chicken. I love having access to the grill.

Saturday- For breakfast I sautéed some sweet potatoes, chicken sausage, spinach and egg whites for a breakfast scramble.  Then it was off to Tortuga Music Festival! It can be hard to make great decisions food wise at a music festival. One thing that I know the points for is a falafel in a pita. That was my late lunch choice and I tried to drink tons of water and enjoyed some beers. Kenny Chesney once again put on a great show! I was totally beat by the time we got home and just drank a bunch of water and crashed.

Sunday- I slept until 11am which I haven't done in forever! For breakfast I had a tuna wrap and Andy and I headed off to Tortuga again! We were got to see Frankie Ballard, Sam Hunt, Band Perry, and Zac Brown. It was once again a fantastic day full of good music, people watching and beer!

Monday- Breakfast was a green berry smoothie. Lunch was half of a veggie sandwich with sparkling water and iced tea. For dinner I went out with Allie and Lindsay to a great place called the Gluttonous Goat. We decided the best way to try many things was to get a bunch of small plates and split everything. It was incredibly delicious!. I had a fantastic drink made of smashed watermelon, jalapeno and vodka.

Tuesday- Breakfast was a banana peanut smoothie. For lunch I had a stuffed squash, broccoli with hummus, and an apple. For dinner I made Andy and I stuffed pablano peppers. The stuffing was made out of leftover chicken, some cheese and salsa. The peppers were then baked and served with guac and jalapeno greek yogurt dip.

Wednesday-Fore breakfast I made a green berry smoothie. I love the ease of making a smoothie before work. It is easy to eat in the car and both filling and delicious. For lunch I had yellow split pea soup from the cafe at work with hummus and carrots. I didn't make it to my weekly Weight Watchers meeting because Andy and I met with the priest to take the Focus Survey. I am kind of glad I didn't have to go deal with the mean lady again! For dinner we went back to one of our favorites. Southwest Salads! We cooked chicken in the crockpot with adobo chilis. The salad consisted of romaine lettuce, cucumbers, peppers, black beans, corn and onion. We also got some crunchy jalapeno peppers to put on top. We also topped with guac and salsa and ranch dressing.

Birthday Month!!

Even though I am back within the lifetime range, that doesn't mean I get to slack with food preparation and planning. Sometimes I have to remind myself that all this planning and preparation is worth it because I am healthier now than I was a year ago.

Thursday-  Breakfast was a berry-banana protein shake. For lunch we had a meeting that I ordered panera for, so I ate half a plate of salad without dressing and half of a napa chicken salad sandwich. For dinner I cooked up 3 oz of corned beef and half of a cabbage. i mixed in some mustard and also ate a red roasted potato cut up and roasted.

Friday- Breakfast was another berry banana protein shake. Lunch was a lentil soup and a cucmber and veggie sandwich at work. For dinner Andy grilled up some salmon and I made pureed cauliflower and sauteed spinach, onion and mushrooms. I made the pureed cauliflower a different way. I steamed the cauliflower, drained the cauliflower and then used my immersion blender to puree it. I added a splash of milk to cream it a bit. It was delicious!



Saturday- Breakfast was the leftover cauliflower puree and about an ounce of leftover grilled chicken. For lunch I made an awesome veggie wrap. I got these habanero-lime wraps for trader joes that are 4 PP each. I spread some jalapeno greek yogurt dip (1 PP) on the wrap and topped it with cucumbers, peppers and spinach,  for a total of 5PP. It was a little spicy but super delicious. I went to the Easter Vigil and then went to get frozen yogurt after that.

Sunday- I made a quiche on Sunday for Easter. I had one piece of quiche which was lucky because I calculated the points after and it was 12 PP for that one piece of quiche! My aunt Gracie was in town and came over to enjoy the quiche. We sat and chatted for hours and then I took her to the hotel so she could relax before her flight. I then went and hung out with Lindsay and Jeremy. They just moved into a new place which was great to see! We chatted and drank wine.

Monday- Breakfast was the usual berry protein shake. For lunch I had roasted broccoli, sauteed spinach and roasted chicken. I also brought an orange and an apple for a snack. Sometimes the simple meals are the best. I worked out after work and then came home and made stuffed squash. This time I stuffed it with ground turkey, onions and squash sauteed together. I couldn't fit the filling into the squash so I made a salad topped with the stuffing, salsa and greek yogurt dip.

Tuesday- For breakfast I made a a berry protein smoothie. Lunch was a stuffed squash topped with salsa, peppers and hummus, and an orange. After work I went to the gym and walked on a 10% incline for 45 minutes. For dinner i had been wanting to try a recipe I found for green bean fries. Since I wasn't sure how I would like them, I decided to use about 15 green beans to make the fries and steam the rest. In addition to this I had a ham and veggie wrap. 

Parmesan-pepper green bean fries (2PP)
15 green beans
1 egg white
1/4 c of parmesan cheese, grated
pepper

Beat the egg white until it starts to foam. Dip the trimmed green beans into the egg white, shake off excess and then roll in the parmesan cheese. Lay on a baking sheet lined with parchment paper and bake at 425 degrees for approximately 10 minutes, or until the cheese is melted. 

Wednesday- Breakfast was an egg white wrap on a habenero lime tortilla. Lunch was a stuffed squash, peppers and hummus an orange and a banana for a snack. For dinner I made a salad with roasted chick peas, cucumbers, scallions, topped with salsa and jalapeno greek yogurt dip.

30th post!

This week marks my 30th post on the blog and today marks the beginning of birthday month. I am proud of myself for being able to keep up with this for the past 30 weeks. I had a great non-scale victory this week. I bought a dress for the rehearsal dinner. I ordered the size that I usually wear. I got it all excited and tried it on. It was too big! So I ordered a size smaller and am going to see how that one works out. My goal for this week is to get in more days at the gym and also stay on track during the weekend. I also want to post some more pictures of meals this week.

Thursday - I have been on a real egg kick lately. I made another breakfast burrito with salsa and guacamole on it. For lunch I went out with a bunch of co-workers. I got a salad with chicken, corn, dates, almonds and cornbread croutons. I totally overestimated the points, because it would have been really hard to get an accurate guess. For dinner Andy grilled up some steaks and bok choy. We then went to one of our favorite bars to meet up with a friend that is in town from Texas.

Friday - For breakfast I made a breakfast sandwich with egg whites, some cheese and an english muffin. I grabbed two oranges as I was walking out the door to make sure I had healthy snacks during the day.

Saturday - For breakfast I made what I am calling Mexican Eggs Benedict. I toasted up an english muffin (3PP). Then I poached two eggs (4PP). Once my english muffin was toasted, I sliced up half of an avocado and put the slices on top of the english muffin. I then topped with the poached eggs and salsa (0PP).

Sunday -  I made mexican eggs benedict again. For dinner I grilled up some chicken and roasted sweet potatoes and broccoli.

Monday - Breakfast was a quick egg sandwich on an english muffin. Lunch was chicken with roasted broccoli and sweet potatoes. For snacks I brought sliced red peppers, and orange and an apple. For dinner Andy wanted corned beef and cabbage, so he made corned beef and cabbage. Unfortunately the corned beef wasn't quite ready by dinner time, so our dinner consisted of red potatoes, cabbage and carrots all roasted

Tuesday - I made an egg sandwich for breakfast. A very simple english muffin with an egg on it. Lunch was leftover chicken, roasted potatoes and roasted carrots. I also brought some sliced peppers, apple and orange for a snack. Dinner was corned beef and cabbage. Andy and I brewed another beer for the wedding. We need to start coming up with names for wedding beers

Wednesday - I was a bit off my game this morning. I didn't make breakfast before I went to work which is always a dangerous start to the day. When I got to work I made a mocha and started drinking water. Since I had to jump on a call right away, I didn't have time to grab breakfast.

Weigh-In update: As of last week I was within the 2 pounds of my Lifetime goal, from when I was lifetime years ago. So As of this week I converted over Lifetime. How this works is I will be weighing in once a month and need to be no more and 2 lbs from my goal weight, if I am not within that range I will have to pay. So starting this week I will only post weigh in's once a month. I will continue to post weekly and update everyone on recipes and healthy living tips.
